COIMBATORE SAMBAR


HOW TO MAKE COIMBATORE SAMBAR


INGREDIENTS:
·        Door dal – 2 cups
·        Brinjal / Eggplant – 2
·        Raw mango  (Optional)
·        Drumstick – 2
·        Big Onion -1
·        Tamarind juice – 1 tsp
·        Tomato – 1
·        Cilantro
·        Asafoetida -1 pinch
·        Salt
·        Ghee – ½ tsp
    Ground masala:
·        Tomato – 1
·        Small onion - 8
·        Coconut – ¼ cup
·        Roasted channa dal – 3 tsp
    Powders:
·        Turmeric Powder – ½ tsp
·        Chilli Powder – ¾ tsp
·        Sambar Powder – 1½ tsp
   Tempering Ingredients:
·        Mustard seeds – 1 tsp
·        Red chilli – 4
·        Curry leaves
 METHOD:
1.     Pressure cook the door dal with ¼ tsp turmeric powder and Asafoetida.
2.     Grind the given ingredients for ground masala.
3.     Chop the onion, tomato and vegetables.
4.     In pan heat 2 tsp of oil and add the onion.
5.     Once the onion is cooked add the tomatoes and cook until the tomato gets smashed.
6.     Now add all the spicy powders and salt.
7.     After 2 minutes add the vegetables and add some water.
8.     Once the vegetables are cooked add the ground coconut masala paste.
9.     Add the tamarind water and cook for 5 to 10 minutes.
10.     Now add the cooked door dal to the above mixture and mix well.
11.     Temper the given ingredients and add it to the sambar.
12.      Add ½ tsp of ghee and season it with cilantro.

PRESSURE COOK DOOR DAL WITH TURMERIC POWDER AND ASAFOETIDA

CHOP THE ONION AND TOMATO

CHOP THE VEGETABLES

HEAT THE OIL AND ADD ONION, TOMATO AND VEGETABLES

ADD THE SPICY POWDERS

ADD SOME WATER AND COOK

NOW ADD THE GROUND PASTE TO IT


ADD TAMARIND WATER AND COOKED DAL

TEMPER THE GIVEN INGREDIENTS 

 SPRINKLE SOME GHEE  AND SEASON WITH CILANTRO
